Primaeval desire

Happy butcher!

Our store of red meat has virtually disappeared, so we were thrilled yesterday when we obtained our annual venison carcass. Kevin’s rarely happier than when he has his plastic apron on – complete with plastic sporran – and some kind of sharp implement in his hand! So, after a morning of sawing, chopping and boning, we’re certainly in no danger of becoming anaemic over the next twelve months! There’s very little waste on most animals and in particular the deer. If you’re prepared  to find a suitable recipe, even  the least attractive cuts can be delicious. At the moment all the discarded bones are roasting to make some stock and soup tomorrow. But never mind cooking. When I cut these steaks I had a very primaeval desire to take a BIG BITE, they looked – and smelled – so wonderful!

      I know – and I’m going to make a venison version of scotch broth with some of it today. Good to take away those winter chills!

    That was one thing I really enjoy on our Scotland trip – that venison was on restaurant menus and was quite affordable. I ordered every chance I had!
